  • 1 kg. Harina de espelta integral
  • 1 pastilla de Levadura de panadero de cualquier súper.
  • 600 ml.Agua.
  • Sal


  • El día antes de hacer el pan, ponemos un poco de agua templada con una cuarta parte de una pastilla de levadura ,van dos pastillas juntas, pues de una.
  • Deshacemos la pastilla de levadura en agua templada, por ejemplo menos de un vaso de agua de 200.
  • Le ponemos la harina hasta que se forme una papilla espesa y la tapamos con plástico transparente de film.
  • La dejamos donde no haya corriente y abrigado si hace frío sin moverlo que no se rompa.
  • Al día siguiente, cogemos la harina integral un kg.más o menos y unos 600 ml. de agua templada. Igualmente deshacer el resto de la pastilla.
  • En un bol ponemos la harina hacemos como un volcán y ponemos la masa madre de el día anterior.
  • Vamos agregando el agua con la levadura y movemos con una cuchara de palo.
  • Cuando la tengamos mezclada le ponemos como una cucharadilla de sal ,según gusto, y movemos con la cuchara de palo.
  • Tiene que estar la masa un poco blanda que se pegue en las manos.
  • La ponemos en la mesa o mármol y es el momento de amasar con las manos sobre 15 minutos hasta que la masa no se pegue tanto en las manos y esté elástica. Nos ayudamos con un poco de harina pero no la debemos dejar dura.
  • Hacemos como un pan una bola. La ponemos en un bol con un poco de harina y la tapamos igualmente con el plástico fuera de corrientes y si hace frío bien abrigada.
  • Dejamos que eleve la mitad.
  • Volvemos a mover la masa y hacemos varios panes o bollos y los ponemos en una bandeja o bol.
  • Los dejamos elevar otra vez .
  • Precalentamos el horno a 250 con las dos placas.
  • Antes metemos un cazo o bol con agua debajo de la bandeja del pan.
  • Cuando el pan éste arriba y tomé un poco de color bajamos el fuego.
  • Comprobamos si el pan está hecho con un cuchillo y si sale seco es que está. Si está así y doradito es que está listo.
