Con 8 alcachofas hermosas bien cocidas, o si lo prefieres, usando alcachofas en conserva, puedes tener listo este delicioso plato en menos de 15 minutos y seguro que te va a gustar.


Para 4 personas

Alcachofa cocida (pueden ser en conserva)
8 Almejas (pueden ser chirlas)
50 g Aceite de oliva virgen extra
1 Diente de ajo
Sal y pimienta al gusto
1 Cebolla
Vino blanco 75 ml
Perejil fresco picado al gusto

Cómo hacer alcachofas con almejas

Elaboración 10 min
Cocción 30 min

Dejamos las almejas gallegas en agua con una pizca de sal para que se vayan limpiando, eliminando las arenillas. Si los excesos económicos de las navidades os pasan factura podéis hacer la receta con chirlas. Mientras, preparamos las alcachofas, pelándolas bien, retirando la punta y cortando en cuartos para cocerlos bien en agua con sal.

Cuando las alcachofas estén bien tiernas, las reservamos para continuar con la receta. Si usas alcachofas cocidas en conserva, bastará con que escurras el producto, reservando algo del agua de cocción o líquido de expedición.

En una fuente amplia, doramos el diente de ajo muy picado y pochamos una cebolla cortada en juliana. Cuando la cebolla empieza a tomar color, agregamos una punta de harina, medio vaso del líquido de cocer las alcachofas y el vino blanco, agregando también las almejas para que se abran con los vapores de la cocción.

Cuando las almejas se abren, reincorporamos las alcachofas cocidas y el perejil picado y dejamos que el conjunto se haga durante unos 5 ó 6 minutos para que se integren bien los sabores.
