
Receta : Mermelada de fresa sin azúcar
Ingredientes:
- 2 kl de fresas
- 250g de dátiles+ 200 ml de agua ( pasta dátil)
- 2 cucharadas de lino 2 cucharadas de chia
- 4 cucharadas de vinagre de sidra de manzana( potencia el sabor de la fresa) o puedes poner el que quieras Un pizco de sal ( potenciador de sabor)
Procesado:
- Poner en una olla ( sin fuego de momento) las fresas lavadas y picadas , añadir el vinagre para que vaya soltando el jugo la fresa y reservamos. En un molinillo molemos la chía y el lino hasta que tenga textura polvo y lo añadimos a la olla con las fresas , más un pizco de sal y removemos de vez en cuando. ( Seguimos reservando) En la picadora ponemos los dátiles sin huesos y con los 200 ml de agua y lo vamos procesando hasta que quede textura crema fina, después añadimos esta pasta a la olla con las fresas, lo revolvemos bien y lo ponemos a fuego medio, removiendo de vez en cuando para que no se queme al fondo de la olla, cuando empezé a hervir lo dejamos media hora más para que evapore algo de agua, y pasado ese tiempo apagar el fuego y cuando no queme y se pueda manipular llenamos los botes los cerramos bien y los ponemos en una olla al fuego ,cubiertos de agua un par de dedos por encima y cuando empecé a hervir lo dejamos 25 minutos para que haga el vacío, apagamos el fuego tiramos el agua que podamos con cuidado de no quemarnos, sacamos los botes y una vez fríos ya pueden ir a la alacena , se conserva un año por lo menos,
